Cardamom Orange Pancakes

Cardamom Orange
Blossom Pancakes

Yield - 4 servings

For the pancakes 

 1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 heaping teaspoon cardamom
1 1/4 cups milk
1 egg
3 tablespoons butter, melted

  • In a large bowl, sift together the flour, baking powder, salt, sugar, and cardamom.
  • Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
  • Heat a lightly oiled griddle or frying pan over medium high heat.
  • Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  • Brown on both sides and serve hot.
For the Orange Blossom Syrup

1/2 cup water
1 cup sugar
1 tablespoon lemon juice
1 tablespoon orange blossom water

  • Place a heavy-bottomed saucepan on medium flame and add all the ingredients
  • Bring to a gentle boil.
  • Once boiling reduce heat and let it simmer (stirring often) for about 20 minutes or till thick.
Cardamom is one of our favorite spices as it's such an interesting flavor. By itself, the cardamom pancake is almost too spicy (like a cinnamon or clove spice, not like a hot spice) and the Orange Blossom Syrup is too sweet. However, when the two come together, it's the perfect balance between the two! Or the orange blossom water, you can find it at some grocery stores, but if you're having trouble finding it take a look at Amazon.com. Also, if you have any extra syrup, add it on top of ice cream or to sparkling water. It's also fun mixed in with cocktails, especially gin or vodka based ones that have other citrus juice in them!
