Southwest Crustless Quiche

Yield - 6 servings 

7 large eggs
⅓ cup water
½ tsp salt
¼ tsp ground pepper
⅔ cup black beans, preferably low-sodium
½ cup chopped tomato
3 oz. pepper Jack cheese, grated
Cilantro, for garnish
Salsa, for serving
 
  • Preheat the oven to 375 degrees F. 
  • Spray a 9-inch pie plage with cooking spray.
  • In a large bowl, whisk together eggs, water, salt and pepper. Pour the egg mixture into the prepared pie dish.
  • Sprinkle the black beans, tomatoes and pepper Jack cheese evenly over the eggs.
  • Bake until the quiche is set in the center and starting to brown, 30 to 35 minutes.
  • Let cool for about 10 minutes, garnish with cilantro and cut in to 6 wedges. Serve with salsa.

What could be better than having a vegetarian and gluten free breakfast recipe at the ready?  Well, having us make it for you of course but if that isn't a possibility, here is a quick and easy recipe that fills you up and will keep you going until lunchtime.  

Black beans add the fiber while the tomatoes and pepperjack add a little bit of zing.  Saute some potatoes, top with a little salsa and *poof* you've got yourself a tasty breakfast!

This can also be made the night before, but why would you when it's so simple?  The great thing is that it can easily be made in single servings if you'd like to cook them in ramekins.  They're also actually pretty good cold if you have any leftovers.
