Cranberry Scones

Yield - 6 large or 12 small
2 cups flour
4 teaspoons baking powder
3/4 teaspoon salt
1/3 cup sugar
4 tablespoons butter
2 tablespoons shortening
3/4 cup cream
1 egg
Handful dried currants or dried cranberries

  • Heat oven to 375 degrees.
  • In a large mixing bowl, combine flour, baking powder, salt and sugar. Mix well.
  • Cut in butter and shortening.
  • In a separate bowl, combine cream with beaten egg then add to dry ingredients.
  • Stir in fruit.
  • Shape into biscuit size rounds.
  • Bake for 15 minutes or until brown.

You'll use lots of measuring spoons for this recipe, but it's worth it! Feeling crazy, change up the fruit or add some different spices. Apple cinnamon, pear vanilla, or any dried berries and citrus zest are all tasty variations.
The base of this recipe is an easy one and uses ingredients that you probably have in your kitchen already. With it being so easy to vary the toss-ins, it's great for spur of the moment coffee guests or friends with specific tastes since you can utilize whatever you may have in the cupboard.
