Potato Pancakes


1/4 cup milk

2 eggs 

3 cups raw potatoes, diced

1 small onion, quartered 

3 Tablespoons flour

1 teaspoon salt

1/4 teaspoon baking powder


Put all ingredients in order listed in a blender, blend about 10 seconds. Pour small amounts onto a hot griddle or frying pan. Fry until brown on both sides, turning once.  Top with applesauce or sour cream if desired. Serve warm. Makes about 18 pancakes.
