Cheesecake Stuffed Peaches


6 peaches                                                                

1/4 C butter, melted

3 Tbsp. sugar

1 tsp. cinnamon

4 oz. cream cheese, softened

1/4 C sugar

1 egg yolk

1 1/2 tsp. vanilla

Heat oven to 350. Line baking pan with parchment. Trim a thin slice from the round side of peach half so they stand flat. Dip cut sides of peaches in melted butter. Arrange cut side up on pan. In a bowl combine the 3 Tbsp. sugar and the cinnamon. Sprinkle cut sides of peaches with mixture.
In a medium bowl, beat cream cheese with electric mixer on medium until smooth. Add 1/4 C sugar, the egg yolk and vanilla. Beat until combined and spoon into peach centers.
Bake uncovered about 30 minutes or until lightly browned and softened.
